1 cup corn, frozen or canned, drained and rinsed
15 oz black beans, drained and rinsed
2 tablespoon taco seasoning
2 chicken breasts
salt and pepper to taste
½ cup salsa
1 cup shredded Mexican blend cheese
cilantro, to garnish
Preheat oven to 375° Fahrenheit.
Lightly coat a baking dish with cooking spray.
Place the corn, black beans and 1 tablespoon taco seasoning and mix.
Season the chicken with salt, pepper and a l1 tablespoon of taco seasoning.
Place chicken on top of corn and bean mixture.
Top the chicken with salsa and shredded cheese.
Cover with foil and place in oven for 30 to 45 minutes until chicken is cooked through.
Top with fresh sour cream, avocado and cilantro before serving.
