Lime Salmon with Avocado-Mango Salsa + Coconut Rice
4 servings


For the Salmon
4 skinless salmon fillets
4 tbsp olive oil
2 tsp lime zest
3 tbsp fresh lime juice
2 tsp minced garlic
Salt and freshly ground black pepper, to taste

For the Coconut Rice
1 1/2 cups Coconut Water
1 1/4 cups canned coconut milk
1 1/2 cups minute rice
1/2 tsp salt

For the Avocado-Mango Salsa
1 large mango,  diced
1 red bell pepper
2 tbsp fresh cilantro, chopped
1 small red onion, diced
1 large avocado, diced
1 lime, juiced
1 tbsp olive oil
1 tbsp Coconut Water
Salt and pepper, to taste

For the Salmon
Preheat oven t0 425 Farenheit.

Place salmon in baking dish and season with olive oil, lime zest, lime juice, garlic, salt and pepper.

Bake for 15 minutes or until done and remove from oven.

For the Coconut Rice
In a medium saucepan bring coconut water, coconut milk and salt to a boil.

Add the minute rice, cover and remove from heat. Let stand till ready to serve.

For the Avocado-Mango Salsa
In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. Season with salt and pepper to taste.
Serve salmon warm with coconut rice top with avocado mango salsa.
