Southwestern Turkey Burger
1 lb ground turkey
2 tbsp fresh chopped cilantro
1 tbsp chopped and seeded Jalapeño
1/4 tsp black pepper
1 small tomatoes, sliced
1 small red onion, sliced
2 tbsp green onions, chopped
1 1/2 tbsp lime juice
1/4 tsp salt
2 tbsp olive oil
I ripe avocado
4 tbsp crumbled queso fresco
4 english muffins or hamburger buns, split and slightly toasted
In a bowl, gently mix ground turkey with cilantro, Jalapeño, lime juice salt and black pepper to taste.
Shape into 4 patties, about 1 inch thick.
Heat oil in a large pan over medium heat.
Cook patties about 4-5 minutes on each side or until no longer pink in the middle.
Meanwhile, smash ripe avocado on a bowl with a fork.
Place cooked turkey burgers on toasted bread and top with avocado, red onion, tomatoes and queso fresco.
