1 lb cooked shrimp, peeled, deveined, tail removed and diced
1 cup freshly squeezed lime juice
1 cup cucumber, peeled and small diced
1 cup tomato, small diced
1/2 cup chopped fresh cilantro
1/2 cup red onion, small diced
1 avocado, small diced
1 jalapeño, deveined, seeded and minced
Kosher salt, for seasoning
In a large mixing bowl, add the cucumbers, tomatoes, avocado, cilantro, red onions and jalapeño and mix.
Add the lime juice and mix to coat.
Add the shrimp and mix well to incorporate.
Season with salt to taste.
