4 pork chops
1/2 tbsp salt
1 tbsp pepper
1 tbsp oregano
1/2 tbsp rosemary
1/2 tbsp thyme
Combine salt, pepper, oregano, rosemary and thyme in a small container.
Rub evenly over both sides of pork chops.
In a pan over medium high heat cook pork chops 10-15 minutes per side or when cooked through depending on the thickness of the chop.
Garlic Mashed Potatoes
2 1/2 lbs potatoes, quartered
1 tsp salt
1/2 cup butter
3/4 cup milk
3 large garlic cloves, mashed
1/2 tsp pepper
1/4 cup chopped Italian parsley
In a large pot bring potatoes to a boil and for 25 minutes or until tender. Drain.
Do not return to heat.
With a potato masher, mash potatoes to preferred consistency.
Add the milk and combine.
Add the salt, pepper and garlic and mix well to combine.
Stir in parsley.
To serve, portion out the mashed potatoes over 4 plates and place a pork chop on top. Sprinkle with more parsley.
