1 tbsp olive oil
1.25 lb lean ground turkey
1 medium onion, chopped
3 cloves garlic, minced
10 oz can tomatoes with green chilies
14.5 oz can black beans, rinsed and drained
8 oz tomato sauce
15 oz chicken broth
1 3/4 cups water
8 oz pasta shells
3/4 cup sharp cheddar cheese, shredded
2 tbsp fresh cilantro, chopped
2 tbsp scallions, chopped
In a large pot heat 1 tablespoon olive oil.
Brown turkey breaking it up with a wooden spoon as it cooks.
Add the onions, garlic, taco seasoning and cook 4-5 minutes.
Add tomatoes, beans, tomato sauce, chicken broth and water.
Bring to a boil, reduce heat, cover and simmer about 15 minutes.
Stir in the uncooked pasta and simmer uncovered over medium heat until pasta is cooked, about 10-15 minutes or according to package directions.
Serve in bowls topped with cheese, scallions and cilantro.
