4 tbsp olive oil
1 yellow onion, thinly sliced with Mandolin Slicer
2 large zucchini, thinly sliced with Mandolin Slicer
2 cups corn
8 oz mushrooms, sliced
1 tbsp dried basil
1 tsp dried oregano
½ teaspoon salt
1 cup shredded cheese
3 eggs, beaten

Preheat the oven to 375 degrees.

Heat the the olive oil in a large skillet over medium high heat.

Add the onions, zucchini, corn and mushrooms and saute until the veggies are soft, about 5-8 minutes.

Add the basil, oregano, and salt. Stir to combine.

Grease a pie pan with nonstick spray.

Transfer half the veggies to the pan and add half the cheese.

Add the rest of the veggies and pour the beaten egg mixture evenly on top.

Add the rest of the cheese on top

Cover with foil and bake for 20 minutes.

Remove foil and broil for an additional 5 minutes to brown the top.

Let stand for 10 minutes before cutting into slices.
