Pork Ingredients:
1.5 lbs pork, cut into thin strips
1 cup pineapple juice
1 tsp grated ginger root
1 clove garlic, minced
4 tbsp brown sugar
5 tbsp soy sauce
5 tbsp ketchup
2 tbsp rice vinegar
1/2 tbsp Sriracha
4-6 wheat tortillas
2 oz shredded cheddar cheese
1 avocado, diced

Directions:
In a large bowl combine pineapple juice, ginger, garlic, brown sugar, soy sauce, ketchup, Sriracha, rice vinegar and stir to combine.

Over medium-high heat and add peanut oil to a medium pot.

Season the pork all over with pepper.

Add pork and sear on all sides until golden brown, about 2-3 minutes.

Pour in the pineapple juice mixture.

Place a lid on the pot and cook on medium for 1.5 hours, then turn temperature to low and cook an additional 30 minutes.

Pineapple Slaw Ingredients:
2 tbsp Greek yogurt
1 tsp rice vinegar
1 tbsp pineapple juice
1 tsp brown sugar
1 tsp orange zest
Pinch of salt and pepper
2 cups shredded red cabbage
3 green onions, chopped
2 tbsp fresh cilantro, chopped
1/2 cup pineapple, diced
1/2 jalapeno, seeded and chopped

Directions:
Mix ingredients into a bowl and set aside in refrigerator till pork is done and ready to assemble.
