4 cups baby okra, washed and trimmed
1 ½ pound beef, cubed
16.5 oz tomatoes, diced
1 large yellow onion, diced
6 garlic cloves, diced
¼ cup olive
2 cups water
3 teaspoon salt
1 teaspoon black pepper
½ teaspoon allspice
1 teaspoon coriander
In a large stock pot heat olive oil over medium high heat.
Add the okra and brown. About 10 minutes. Remove okra and set aside.
In the same pot, add the onions, garlic, beef, salt, pepper, allspice, and coriander and cook until beef is browned and cook through.
Add water and bring to a boil. Reduce heat to low and cover until meat is tender. About 20 minutes.
Add okra and tomatoes and still to combine.
Cover and continue to cook on a low simmer until okra is tender. About 20-30 minutes.
Serve over rice.
