Picadillo Tacos

1 lb ground beef
1 cup onion, minced
1 red bell pepper, diced
3 cloves garlic, minced
1/4 cup cilantro, minced
1 large tomato, diced
8 oz can tomato sauce
1/4 cup water
1/4 cup green olives, sliced
2 tsp ground cumin
1/4 tsp garlic powder
2 bay leaves
salt & pepper

On medium-high heat in a large skillet  brown meat and season with salt and pepper to taste.

Add the onions, garlic and bell pepper and cook about 5 minutes while stirring occasionally.

Add diced tomato, cilantro, tomato sauce, 1/4 cup water, olives and the the spices and stir to combine.

Lower heat to low and simmer covered for 20-30 minutes.

While meat is simmering, make the pico de gallo. In a bowl, add a small handful chopped cilantro, 1 diced tomato, and 1 sliced scallion, juice from half a lemon, 1 tsp olive oil and salt and pepper to taste.

Once Picadillo is done, assemble tacos with pico and other favorite topping such as avocado, cheese and sour cream.
