Broiled Tilapia

4 Tilapia filets
2 lemons, thinly sliced
2 tbsp fresh dill, chopped
1 tbs olive oil
salt and pepper

Pre heat oven to broil.

Line a cookie pan with foil. Lay 2 lemon sliced vertically on pan repeating 3 times and about 1 1/2 inch apart.

Sprinkle lemon slices with some of the dill.

Lightly season fish on both sides with salt and pepper and place over each pair of lemon slices.

Drizzle with olive oil and sprinkle rest of the dill and place 2 lemon slices on top of each filet.

Broil fish about 12 minutes or until cooked through.


Couscous with Pistachios 

1/3 pistachios, shelled and toasted
1 tbsp olive oil
1/2 cup red onion, minced
10 oz peal couscous
1 3/4 cup water
1 tbsp lemon juice
salt and pepper

Heat oil in saucepan on medium high.

Add onions and cook until soft, about 5 minutes.

Add couscous and heat while stirring occasionally, about 4 minutes.

Pour water over couscous and onions and bring to a boil. Reduce heat, cove and simmer for 12 minutes.

Remove from heat, and add lemon juice, pistachios salt and pepper to taste.



16 oz broccolini
3 tbsp sun dried tomatoes packed in oil, chopped
4 tsp on sun dried tomato oil
2 tbsp red onion, minced
2 garlic cloves, thinly sliced
salt and pepper

Cook broccolini in a skillet with water till crisp tender.

drain in colander and set a aside.

In same skillet wipe clean on medium heat add the tomatoes with oil, onions and garlic and cook until soft, about 5 minutes.

Add broccolini and toss to coat and season with salt and pepper.
