1.25 lb turkey sausage; casing removed
3 tsp olive oil
2 clove garlic, minced
15 oz Cannellini beans, drained and rinsed
4 cups chicken stock
2 cups water
1/2 bunch kale; leaves removed from the ribs and roughly chopped
salt and pepper

In a medium sized pot, heat olive oil.

Add sausage breaking it up into large chunks with a wooden spoon.

Cook for about 10 minutes or until done.

Add garlic and saute for 3 minutes while continuously stirring not letting it brown or burn.

Add the water, stock and beans and stir thoroughly.

Simmer on medium-low for 10 minutes, covered.

Add the kale and simmer for another 10 minutes, covered.

Adjust salt and pepper to taste.

Serve hot.
