1 lb cubed beef (you can use all lamb or a combination of lamb and beef)
1 large onion, chopped
2 carrots, sliced
4 potatoes, quartered
1 teaspoon thyme
3 cups beef stock
salt and pepper
2 tablespoons parsley, chopped
Preheat oven to 325F.
Season beef with salt and pepper to taste and arrange the beef in the bottom of a casserole dish.
Layer the onions, carrots and potatoes on top of the meat.
Sprinkle with thyme and pour in the stock, then cover and cook in the oven for 2 1/2 hours.
Garnish with the parsley and serve.
CROCK POT METHOD:
I used pearl onions, baby carrots and potatoes placed everything in a crockpot. Cook on low heat for 10-12 hours or on high heat for 5 to 6 hours.
