1 package Goat Cheese and Sun Dried Tomato Ravioli (Trader Joe”s)
1/2 lbs thinly slicked sicken breasts
1 cup Crème fraîche
3 tbs lemon juice
8 cherry tomatoes, havled
2 cloves garlic, crushed and minced
grated Parmesan cheese
5 fresh basil leaves, chopped
salt & pepper to taste
Heat olive oil in pan over medium heat. Season chicken with salt and pepper. Add 1 clove garlic to pan and saute for a few minutes. Add chicken and cook on both sides until done. Add the tomatoes and cook for a few minutes until they become soft.
In a small bowl, add the Crème fraîche, 2 tablespoon lemon juice salt and pepper to taste and set aside.
Bring salter walter to a boil and add ravioli. Cook for 5 minutes stirring carefully and drain.
Add the Crème fraîche to the ravioli and mix.
In a plate, place ravioli with sauce on bottom, then add chicken with tomatoes and drizzle with a little sauce, parmesan cheese and basil.
