Ingredients
1 pound Grouper, cut in half
olive oil
1 garlic clove, smashed
salt & pepper

Directions
Season grouper with salt & pepper, smear smashed garlic on both sides and drizzle with olive oil. Cook in a greased pan on medium high heat about 10 minutes on each side.

Relish
Ingredients
1 avocado, diced
1 mango, diced
1 small tomato, diced
1/4 cup red onion, diced
2 tablespoons olive oil
2 table spoons lemon juice
salt & pepper

Directions
Mix all ingredients in a bowl and season with salt and pepper to tate. Cover and place in fridge till ready to serve.

Couscous Ingredients
1 cup pearled couscous
1 ¾ cups water
1 clove garlic minced
½  medium red onion, minced
1 tbs lemon juice
Handful fresh basil minced
Salt & pepper
olive oil

In a medium saucepan, heat olive oil and sauté garlic and red onions. Add 1 ¾ cups water and pearled couscous. Bring to a boil. Reduce heat to a medium and simmer for 8 minutes uncovered. Stir occasionally. Add rest of ingredients and stir. Bring back to a medium boil and simmer for 4-6 minutes or until couscous is tender. Let stand covered 4-5 minutes before serving. Stir well and serve immediately.
