2 15 oz can black beans
4 avocados, mashed with 1 tsp lemon juice, salt and pepper
8 oz fat-free sour cream
2 tsp tajin clasico seasoning
3 green onions, diced
2 tomatoes, diced
1/4 cup low fat Mexican cheese blend
1/4 cup back olives, diced
1/4 cup pickled Jalapeño, diced
2 garlic cloves, minced
1/4 cup onion, diced
1 tbs olive oil
Salt & Pepper
Heat olive oil on medium high heat on a small pot. Sauté the garlic and onions for a few minutes. Add the black beans and salt & pepper. Cook 5 minutes and set aside to cool.
Mix sour cream and Tajin clasico seasoning in a small bowl.
In a serving platter, layer the beans, avocado, yogurt. Sprinkle with green onions, tomatoes, olives, jalapeños and cheese.
Serve with tortilla chips.
