1/2 lb Salmon, cut into 2 pieces
1 Yellow Pepper, chopped
1 Yellow Onion, chopped
3 Garlic Cloves, minced
1 tsp jalapeno, minced
1 tsp Coriander
1 tbs Flower
2 tbs Olive Oil
1/2 c white wine
Salt & Pepper

Season salmon with salt, pepper and coriander; then dust with with
flour. Heat 1 tbs olive oil and cook fish on medium heat for 5-6 minutes
on each side with lid closed. In the meantime, heat 1 tsp olive oil on
medium/high heat. Add garlic and cook for 1 minute. Add onion and cook
for additional 5 minutes. Then add yellow pepper and jalapeno and cook
for 10 minutes. Add the white wine and cook while stiring till onions
and peppers are soft. Place lit on pot and let sit and cool. Place in
blender or food processor and puree if you like a sauce consistency or
chop. Add little bit of water till desired consistency is reached.
