Salmon
1/2 lb salmon, cut in half
1 Clove Garlic, minced
1 tbs shallots, thinly sliced
2 tbsp olive oil
2 tsp Dijon Mustard
Salt & Pepper

Season salmon with salt & pepper and spread 1 tsp per filet. Heat olive oil in skillet to medium and saute garlic for 3 minutes. Then add shallots and saute for 3 minutes. Add Salmon skin side up and cook for 10-15 minutes. Turn salmon to skin side down and cook covered for 20 minutes.

Spinach Spaghetti
1/2 package of spaghetti, cooked to direction on package
1 clove garlic
1/2 shallot
1 medium tomato diced
2 tbs olive oil

Heat olive oil in a pot and saute garlic and shallots until tender. Add spaghetti and toss in tomatoes. Season with salt & pepper to taste.
