Salmon
1/2 lb salmon, cut in half
1/4 cup dry white wine
2 tbsp lemon juice
2 tbsp olive oil
2 clove garlic, minced
Salt & Pepper

Preheat oven to 400 degrees. Place salmon is a baking dish and combine all ingredients. Bake for 20-25 minutes or until salmon is done.

Quinoa
1/2 cup Quinoa
1 cup water
1/2 chick peas
1 medium tomato, diced
1 tsp curry powder
1 tbsp olive oil
1 chicken bouillon
salt & pepper

Eggplant and Onions
1 small eggplant, chopped
1/2 red omion, thinly sliced
2 cloves garlic, minced
2 tbs olive oil

Heat olive oil in skillet on medium high heat and saute the garlic for 1 minute. Then add the onions and cook a few more minutes till almost transparent. Add the eggplant and cook until brown or desired consistency.
